Finally, Guilt Free & YUMMY Rice pudding (DGF)

This is a healthy version of an old time favorite comfort food! Try a batch and I guarantee you will double the next batch!

3/4 cup of uncooked BROWN Rice
2 cups of Vanilla SOY MILK divided
1/3 cup of RAW SUGAR
1/4 teaspoon SEA SALT
1/2 teaspoon Vanilla extract

1. In a medium saucepan, bring 1 1/2 cups of water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes. Make sure the rice is not firm.

2. In another saucepan, combine the cooked rice, 1 1/2 cups of soy milk, salt. Test texture of rice to preferance...THEN add the sugar. Cook over medium heat until thick and creamy. Approx. 20-30 minutes. Stir in remaining 1/2 cup of soy milk. Make sure to stir frequently so it doesn't scorch.

3. Remove from heat, and stir in vanilla.
4. Server warm or cold.....! (If any gets to the fridge. the soy tends to seperate...just stir. I prefer it warm.)
